Before starting the synthesis of this chapter, it is worth remembering that the focus of Bullipedia is on the fine dining restaurant sector. Consequently, this is a key chapter in the Tomato Sapiens, where we explore the tomato’s place in the various processes and systems in which it is involved. We examine how to buy tomatoes, where to store them and how to keep kitchen hygiene under control. We then look at its role in the whole organisational and operational system of the restaurant.

The kitchen is lucky to count on the food industry as an indispensable ally. Thanks to it, we have tomato products that can simplify and minimise the time spent on preparing elaborations. We examine these products and investigate how the industry can help us when it comes to cooking.
