CHAPTER 1

Contextualization: wine as a beverage

Our subject of study is wine in the context of the fine-dining restaurant. But do we really know what we mean by the word wine? What is the provenance of the word? What has been its semantic evolution?

Sapiens, the research method we use to understand knowledge, will guide our research. This chapter will question the status quo and restate some everyday beliefs, contextualizing the object of our study.

The chapter poses many thought-provoking and pertinent questions to help us understand better the current state of knowledge, offering us a unique vision of what we mean today by the word wine.

How many ingredients are used in wine production? What are they? Is wine a living organism? Where, when and how do we consume it? And, importantly, why? Is wine an artisanal or industrial product? What role does nature play?
