COCOA: FROM NATURE TO THE MARKET PLACE

What is the origin of the cocoa plant? What were the first plants like? What are their morphological characteristics?

What varieties and cultivars exist? These are some of the questions we answer in this chapter and, in the light of these, we apply the Sapiens methodology to arrive at the classification of cocoa. This will enable us to organise the available information and thus generate new knowledge.

Finally, we address the cultivation of the cocoa plant and the diseases associated with it, and define the beneficiary processes step by step, examining the physico-chemical transformations that occur during fermentation and drying to obtain cocoa beans ready for the market.
